Vanderlyle is a small restaurant at 38-40 Mill Road built around a plant-led tasting menu with matched drinks. The restaurant says it works directly with farmers, growers and producers, sourcing local, ethical and regeneratively grown produce, and that its dishes follow the seasons and the best of what those suppliers offer.

The approach

Sustainability is described on its website as the core value. The restaurant says it was founded to take a different approach to fine dining, one that considers the environment and also the mental and physical health of hospitality staff. To that end it opens for only four services each week. It adds that it has never served meat or fish on its menu and does not intend to, a result of finding that coaxing flavour from plants proved an enjoyable challenge. Sample menus are published for the standard tasting menu and for vegan and gluten-free versions.

Booking

Vanderlyle asks guests to pay for the tasting menu in advance, through the Tock booking service. The restaurant explains that this lets it prepare for dietary requirements and order ingredients precisely, which cuts waste. New reservations are released a month at a time, at midday on the first Tuesday of each month, for the following month. A newsletter is sent before each release. Because tables are prepaid and released in batches, this is a restaurant to plan ahead for rather than walk into. Vouchers are also sold on the website.
